With two locations, Wright’s Barbecue can be found in Johnson and Bentonville, AR. While on the search for a good pork belly burnt end recipe I stumbled onto The Rocket Man. I followed their burnt ends recipe and decided to go the extra step by simply adding chopped brisket over a base of mashed potatoes. What’s great is that you could really order some or possibly all of these items from your favorite local BBQ joint and assemble it at home for the family. If you need to serve up a specialty dish at a competition or want to do something unique at your next backyard event I recommend creating a mashed potato bar with instructions on building a Rocket Man.

Ingredients:

1) Chopped Brisket (Wright’s Barbecue Brisket Recipe Review)

2) Bacon Burnt Ends (Wright’s Barbecue Bacon Burnt Ends Recipe Review) -Costco is a good source of pork belly.

3 ) 5 lbs. of Russet potatoes

4) 1 lb of butter

5) 1 C. heavy cream

6) 2 Tbsp. of Kosher Salt

7) 1 Tbsp. of black pepper

8) 1 Tbsp. of garlic powder

9) Optional Toppings: onions, shredded cheese, jalapenos, pickled onions, sour cream, barbecue sauce

Mashed Potatoes Directions

  1. Peel and boil potatoes until tender.

  2. Drain pot and add butter (#1), heavy cream (#5), and spices (#6-8).

  3. Mash it up and add cream until you reach the desired consistency.

Rocket Man Assembly Directions

  1. Add 4 oz mashed potatoes to bowl

  2. Add 3 oz. Chopped Brisket and 2 oz of Bacon Burnt Ends

  3. Add your favorite toppings (#9) onions, shredded cheese, jalapenos, pickled onions, sour cream, barbecue sauce.
