Charlotte, NC based Midwood Smokehouse has 5 locations and delivers consistency across all of them, though I’m partial to the downtown location on Central Ave. Their apps are great and you can never go wrong with the smoked wings. I also, highly recommend the brisket nachos!

Matt Barry shared his wing recipe with the Big Green Egg which contains a great blend of spices. These make for a great meal, to bring to a tailgate or backyard BBQ. With football playoffs coming up, now is the time to step up your wing game.

Ingredients:

1) 1 C. granulated garlic

2) 1 C. kosher salt

3) 1 C. white sugar

4) 1 Tbsp. black pepper

5) 1 Tbsp. cayenne

6) ¼ C. paprika

7) 1 Tbsp. chili pepper

8) 1 Tbsp. guchang spice

9) 1 Tbsp. bourbon molasses

10) 3 dozen Chicken Wings (Midwood sources from Springer Mountain)

Directions

  1. Mix ingredients #1 to #9.

  2. Toss Wings to get even spread of spice blend.

  3. Bring pit to 375*F and Cook for 30 min.

  4. Turn wings during cook process and remove once internal temp reaches 165*F.
